Jugo de Tamarindo

On a hot summer day, a typical drink among Latinos is made from the tamarind pond.  Tamarind pod’s come from caribbean areas like Puerto Rico , Cuba , the Dominican , and even Afric a. For this reason there are plenty of recipes depending on where you are. Here is a simple recipe that serves about 4.

What you’ll need:

  •  
    • 8 Tamarinds
    • ½ cup sugar
  1. Bring 1 quart of water to a boil
  1. Then add the pods and the sugar and stir while it boils for one minute.
  2. Pour into a glass or stainless steel bowl
  3. Let it sit for about 2 hours.
  4. Break up the pods to separate the pulp from seeds
  5. Strain the juice. Taste for strength and sweetness.
  6. Add water or sugar as needed.
  7. Cover and refrigerate until time to serve.
