Jugo de Tamarindo

On a hot summer day, a typical drink among Latinos is made from the tamarind pond. Tamarind pod’s come from caribbean areas like Puerto Rico , Cuba , the Dominican , and even Afric a. For this reason there are plenty of recipes depending on where you are. Here is a simple recipe that serves about 4.
What you’ll need:

- 8 Tamarinds
- ½ cup sugar
- Bring 1 quart of water to a boil
- Then add the pods and the sugar and stir while it boils for one minute.
- Pour into a glass or stainless steel bowl
- Let it sit for about 2 hours.
- Break up the pods to separate the pulp from seeds
- Strain the juice. Taste for strength and sweetness.
- Add water or sugar as needed.
- Cover and refrigerate until time to serve.
