Taco Night! Mmmm...that means tacos de carne molida. Even though I love them, this time I made them light. Yes, I know Mexican food is not intended to be light, but I have high blood pressure so I've altered the way I cook them, to make sure its healthy for my heart.
- 1 lb of ground turkey
- 1 packet of taco seasoning
- Corn tortillas/or hard shell tacos
- Salt & pepper to taste
Brown the ground turkey. Add the seasoning and 2/3 cup water simmer 10 minutes..
Serve with corn tortillas or hard shells with chopped lettuce, salsa, sliced tomatoes, and shredded cheese. Serve with arroz y frijoles
*** Health Tip***
If you're really trying to stay healthy, eliminate the tortillas and hard shells and make a taco salad. If you choose to use sour cream, make sure it's fat free!
