Quien Quiere Pupusas?

La pupusa de origen viene del el Salvador y también de Honduras. It's a lot like the tortilla, in that it is made of maize but thicker and stuffed with a variety of things. This has become so popular among the natives of el Salvador that November 13th has been declared as “National Pupusa Day”. Below is a recipe you can make at home. It only requires a bit of ingredients, but there is a technique involved in kneading the masa. Pupusas are so delicious just the thought is making me hungry! Ya se me hace agua la boca!
- In a large bowl, mix la masa and water and knead well until dough is moist yet firm. (It should not crack at the edges when you press down on it.)
- Roll the dough into eight balls
- Press an indentation in each ball with your thumb.
- Put a small amount of desired filling into each indentation and fold the dough over to completely enclose it.
- Make sure to enclose the edges much like a pie to insure the filling doesn’t spill out
- Using a tortilla press, place the dough between two pieces of plastic wrap and press out or roll it out with a rolling pin.
- Cook each pupusa for about 1-2 minutes on each side using an ungreased skillet.

If you don’t have time to knead the harina, purchase it already made at your local grocery store or carniceria.
