Pollo Enborachado

This is a recipe the my family loves including my (11-year-old son and he is a picky eater). The best part is that Tequila is used as an ingredient! I’m telling you guys: in my house, tequila is a must have! So here it goes:

Ingredients:

  • 4 pieces of chicken breast
  • 2 teaspoons shredded lime peel
  • 4 to 5 freshly squeezed limes
  • ½ cup of orange juice
  • ½ cup of tequila gold
  • ¼ teaspoon of salt
  • ¼ teaspoon of pepper
  • 2 tablespoons of honey
  • Chili powder  

Day Before:

Combine ingredients (except honey) in a medium bowl. Cover and marinate the night before in the fridge

Day of:

1)Pre-heat oven to 400 degrees.

2)Place chicken breasts on a glass casserole dish, using the honey to lightly coat each one.

3) Bake for 1 hour and serve with veggies or rice .
