Every Christmas, instead of more turkey and stuffing my grandmother makes mole. MMMMMMM! It’s so delicious! She loves to use Dona Maria’s Mole sauce in the glass jar with the yellow cap. In my opinion, it’s the best. Here’s a recipe taken directly from Dona Maria’s website:

I N G R E D I E N T S:

(Yields 8 servings)

1 cut-up chicken (about 4 pounds) 

Salt and pepper to taste 

1 tablespoon oil 

1 jar DONA MARIA® mole (8.25-ounce) 

4 cups chicken broth 

 
 
 

I N S T R U C T I O N S  

Preheat oven to 350°F. Rinse chicken pieces and place on a rack in a shallow baking pan. Spray with nonstick coating spray or brush with oil. Season with salt and pepper. Bake uncovered at 350°F for 1 hour or until internal juices are no longer pink. Meanwhile, heat oil in 2-quart saucepan. Stir in mole and heat for 1 to 2 minutes; stir constantly. Gradually add chicken broth; stir to dissolve mole. Bring to a boil; reduce heat and simmer, covered with lid slightly askew, for 1 hour. Stir frequently. Remove chicken from oven and transfer to serving plate. Serve with remaining mole mixture.  

They have so many recipes to choose from, but this one was quick and easy. Let’s face it: who wants to spend all that time cooking when you would rather be eating!
