Yes! The kids are back in school and after a long day at work some of us don’t always have the energy for an extravagant meal. There is nothing wrong with that, amigas. The Latina of today is a wife, mami, and entrepreneur, and some days she just doesn’t feel like cooking a full course meal. Here’s a quick recipe for a popular children’s favorite, Fish & Chips.
What you will need:
1 ½ cups of all purpose flour
1 tbsp dry mustard
Salt & pepper to taste
2 cups of buttermilk
2 eggs
1lb of tilapia cut int0 24 strips
3 cups of bread crumbs
½ cup canola oil
In a large mixing bowl, mix flour, mustard, salt, and pepper. Add buttermilk and eggs. Coat fish with egg mixture, then bread crumbs. In a pan, heat some oil on medium. Drop in oil cooking for about 5 minutes, turning as needed to evenly brown on both sides.
