Mexican Bell Peppers

I work at a center surrounded by agriculture. One of the perks is that the parents of the students we care for are very generous in that they give us whatever is in season. Yesterday I was given green bell peppers on the way home I contemplated over what I should make for dinner. I decided I would utilize the peppers I had been given and make delicious Stuffed peppers con carne molida.
What you will need:
- 4 Bell peppers (cleaned and seeds/stem removed)
- 1 lb. cooked ground beef
- 1 cup cooked Mexican rice
- 1 16 oz. can of tomato sauce
Queso fresco
- Begin by preheating oven to 350°
- Mix your cooked carne molida and arroz mexicano in a medium bowl
- Add 8 oz. of tomato sauce to the mixture
- Add seasoning (garlic salt, pepper, oregano) to your liking
- Stir it all together
- Take peppers and stuff with mixture
- Place on casserole dish
- Pour remainder sauce on top of peppers
- Bake for 50 minutes
- Add cheese to the top, bake for another 10 minute
- Let them cool down and enjoy
