Ensalada de Chorizo with Cilantro Dressing

This is one of my favorite ensaladas I have very tasted!
Total Cost: $ 13.20
Ingredients:
2 ½ cups F&E grated parmesan cheese
6 cups Romaine lettuce, roughly chopped
½ small red onion, thinly sliced
12 oz. pork chorizo
¼ cups Cacique queso fresco, crumbled
¼ cup F&E creamy cilantro dressing
Cooking Directions:
- Preheat oven to 375F.
- In a baking sheet lined with a silpat mat, place 6 mounds (3 tbsp each) parmesan cheese and tap until flat.
- Bake for 8 to 10 minutes until golden brown.
- Quickly remove from oven and using a spatula transfer the parmesan disc to a muffin tin.
- Gently place a small shot glass on top of parmesan disc to mold into shape of a cup.
- Allow to cool for 5 minutes.
- Repeat process until all cheese is used.
- In a skillet, cook chorizo over medium heat.
- With a slotted spoon, place chorizo on a paper towel lined plate; allow to cool and drain.
- In a bowl, gently toss lettuce, onion, chorizo, queso fresco and cilantro dressing.
- Top Parmesan cups with salad and serve immediately.
