Salsa de Elote

Elotes are currently in season. They can be found for amazing prices at all stores. Here is a quick and easy side dish made with corn.
- 3 tablespoons of butter
- 10 ounces of corn
- 1 red bell pepper chopped
- 3 green onions chopped
- 1 jalapeño chopped
- ½ cup of salsa
- ½ tsp salt
- ½ tsp pepper
- Cut up the peppers and onion, set aside.
- Melt butter in a large pan.
- Add corn, bell pepper, onions to butter. Turn heat down. Stir for 10 minutes until veggies are tender.
- Add salsa & jalapeño
- Serve as side dish
