Here's another recipe for my lent observing readers. It's a tilapia dish. Tilapia is fairly inexpensive and easy to work with.
Ingredients:
- 1 1/2 pounds tilapia fillets
- 1 tablespoon melted butter
- Salt and pepper
- 1 tablespoon olive oil
- 1 clove garlic (chopped)
- 2 green onions (chopped)
- 1/4 cup fresh cilantro (chopped)
- 1 cup heavy cream
- 1 tablespoon lime juice
- Salt and pepper to liking
Preparation:
- Heat oil in a saucepan over low heat; add garlic and onion
- Add cream and cook for about 3 to 4 minutes to reduce slightly.
- Stir in cilantro, lime juice, and salt and pepper to taste. Simmer for about 1 minute longer.
- Heat oven to 375°.
- Bake the fish for 20 to 25 minutes in a baking pan
- Serve on a plate and pour sauce on top Enjoy!
