El Saltarin

My maternal grandmother lived in the San Fernando Valley. On Sundays, while visiting, she’d give us our Domingo ( which was a dollar) and we’d walk down to El Saltarin. El Saltarin was an antojito spot. They had raspados , churros, dulces and so many other goodies. I remember standing there holding my dollar waiting for my raspado de vainilla. To this day, I have never had a raspado like that one ! On a hot day or maybe a family event, why not make raspados using shaved ice and flavorings like Vanilla, Tamarindo, or Jaimica? Here’s a recipe for a Vanilla flavoring:
Ingredients:
2 cups water
2 cups sugar
2 tablespoons pure vanilla
Prep:
Bring water and sugar to a boil.
Continue to stir until it begins to thicken.
Remove from stove and add vanilla.
Refrigerate( make sure mixture has cooled down to room temperature before refrigerating) until ready to serve.
