Dulce De Leche

It seems like in recent years the Dulce de Leche craze has become main stream from cakes, candies, and ice cream. Este sabor is everywhere! Dulce de leche originated in Argentina and is typically used to fill cakes or served over bananas. Unlike Cajeta(which tends to be thick), Dulce de Leche can be drizzled. Here is a simplified recipe for Dulce de Leche:
What you will need:
- 1 gallon of milk
- 1 vanilla bean
- 4 1/2 cups of sugar
- 1 tsp baking soda
- In a large sarten, bring milk to boil. Remove from heat and strain in a cheesecloth.
- Return milk to pan.
- Cut vanilla bean in half and pour seeds in milk and sugar bringing it to boil until sugar is dissolved. As it begins to boil, stir in baking soda. Reduce heat to medium and stir consistently until mixture thickens.
- Place the pan in a bowl of ice and stir until mixture becomes cold.
